The Crystal DaggerIn 2022 this Riesling was hanging golden and freckled on the vine. We picked the grapes and trod them to let the juice soak with the gorgeous skins for several hours. After pressing, the juice was radiant, and we let it settle for two days in steel before racking into four neutral barrels. The wine fermented slowly through the winter and in the spring malolactic fermentation had only partially finished. We continued to stir the lees gently, once each

We pressed the grapes directly after picking and fermented this in 500L Damy Puncheons

In 2023 the grapes ripened just on the fringe of the season

this wine retained 45 grams of residual sugar per liter
