It has always been our motto that when you change a person's relationship to their food

and cool wild ferment followed by 6 months on lees in stainless steel vats

Wild ferment for approximately 20 days

chilled if necessary

50% of the Crozes comes from a parcel of young vines planted in 2003 and owned by Domaine Jean Louis Chave

and are individually crafted to be both beautiful and delicious

Only the latter remains today - it’s now the headquarters of the Corbieres' winegrowers syndicate

They carefully examine each appellation/terroir and choose the barrel size for each that they feel is right

which had been a shining light in the old-school Chablis clubhouse of quality

The winery is also a perfect fit for this approach

they have grown to thirty-six acres of vineyards and a modern gravity flow winemaking facility where they produce Bourgogne

this allows Emmanuel to farm organically with ease (he is above the fog line and therefore has no issues with mildew)
