Add the mussels
In a heavy cast iron fry pan heat the oil
• small handful fresh thyme leaves
• 450g cleaned squid bodies and tentacles
such as maris piper
season with pepper and serve tomatoes alongside
Leave for 3-4 minutes before carefully turning over
Rinse the squid thoroughly and shake dry
• 2 tbsp olive oil
discarding any that are cracked or will not close when tapped
